Barbecue is a method of cooking by which meat, poultry, fish or other food is covered and slowly cooked in a pit, using hot coals or hardwood as a heat source. The spices generally used are chili powder, salt, cumin, cayenne pepper, dry mustard, paprika, black pepper, and brown sugar to achieve the characteristic mildly sweet flavor. The raw food should be rubbed with the blend at least 30 minutes prior to barbecuing.
